摘要
使用植物乳杆菌2-18和枯草芽孢杆菌Y、枯草芽孢杆菌Y4-2联合蛋白酶共同水解大米蛋白,测定大米蛋白的水解溶出率及脱除液的血管紧张素转换酶(angiotensin I-converting enzyme,ACE)抑制活性。在利用菌酶联合水解大米蛋白的组合中,植物乳杆菌2-18+风味蛋白酶/菠萝蛋白酶+胃蛋白酶/酸性蛋白酶组合对大米蛋白的水解溶出率最高,蛋白脱除率为(91.32±1.60)%。大米蛋白水解溶出液中必需氨基酸占总氨基酸含量的39.62%。通过对分子量分布分析,大米蛋白水解溶出液的多肽分子量分布主要在1 kDa~1.5 kDa部分。经植物乳杆菌2-18+风味蛋白酶/菠萝蛋白酶+胃蛋白酶/酸性蛋白酶组合对大米蛋白的水解溶出液ACE抑制率达(91.95±1.63)%,具有良好的ACE抑制活性。
The rice protein was removed by the combination of Lactobacillus plantarum 2-18 and Bacillus subtilis Y, Bacillus subtilis Y4-2, and the rice protein removal rate and the angiotensin I-converting enzyme (ACE)inhibitory activity of rice protein removal solution were determined. In the groups of using the combination of bacterium and enzyme to remove the rice protein, the combination of Lactobacillus plantarum 2-18+ Flavor protease/bromelain + pepsin/acid protease had the highest removal rate of rice protein, which was (91.32±1.60)%. The essential amino acids in the rice protein removal solution accounted for 39.62 % of the total amino acid content. Through molecular weight distribution analysis, the molecular weight distribution of the peptide of the rice protein removal solution is mainly in the 1 kDa -1.5 kDa portion. The ACE inhibition rate of the protein removal solution obtained by Lactobacillus plantarum 2-18+ flavor protease/bromelain + pepsin/acid protease combined with rice protein was (91.95±1.63)%, and its removal solution has well ACE inhibitory activity.
