摘要
御膳,是帝王独享饮食,是宝贵的非物质文化遗产。如何活化御膳非物质文化遗产,使之落地在现代餐饮业经营,作者从餐饮市场经营业态空位,御膳文化特征,接受专家学者培训,尊重御膳历史总体框架等四个方面加以阐述,对餐饮企业经营御膳具有现实指导意义。
Royal Food are the exclusive diet of emperors and valuable intangible cultural heritage. This article elaborates how to activate Imperial Diet intangible cultural heritage and make it fall into the modern catering industry. It has practical guiding significance for catering enterprises to carry out Imperial Diet Management from four aspects : the vacancy of catering market operation mode, the characteristics of Imperial Diet culture, the training of experts and scholars, and respect for the overall framework of Imperial diet history.
