摘要
电子舌是模拟人的舌头及其神经系统的信息处理过程的智能味觉仿生系统,可构建客观的味觉评价体系,以快速、简便和灵敏等优点在食品检测领域具有广阔的应用前景。概述了电子舌系统的结构原理和技术现状,介绍了电子舌在食品的味道评价及比较、原料追溯、质量分级、伪劣掺假鉴别和加工过程监测等方面的应用进展,指出其在检测应用中存在的一些问题,并对其应用前景进行展望。
Electronic tongue is an intelligent taste bionic system which simulates the information processing process of human tongue and its nervous system. It can construct an objective taste evaluation system. It has broad application prospects in the field of food detection with its advantages of rapidity, simplicity and sensitivity. The structure principle and technology status of electronic tongue system are summarized. The application progress of electronic tongue in food taste evaluation and comparison, raw material traceability, quality classification, adulteration identification and process monitoring is introduced. Some problems existed in the application of electronic tongue system are pointed out, and its application prospect is prospected.
