贝塞尔模型在黄酒发酵温控系统中的应用 被引量:3

摘要 黄酒发酵过程中,温度变化是一个敏感且非线性的复杂过程,不同的温度变化过程对黄酒酿造的品质产生的结果也不尽相同.目前,文献对黄酒发酵过程中的温度变化过程鲜有具体的应用计算模型.针对黄酒发酵过程中的发酵物的生化及温度变化特点,结合发酵罐的柱形特征,设计出一种基于Labview组态软件及西门子PLC300的瞬时温度采集及控制系统,并基于贝塞尔函数设计出一种针对发酵罐的瞬时温度处理方程.该系统很好地解决了黄酒发酵过程中的温度波动及分布不均的情况.仿真实验结果表明,该系统具有温度采集迅速、准确等优势,并且算法的处理结果比较精确,具有误差小,鲁棒性强等特点,具有良好的实用性. In the process of yellow rice wine fermentation,temperature change is a sensitive and nonlinear complex process and greatly affects the quality of yellow rice wine.Literature to date little involves the practical calculation models for the temperature changing process of rice wine fermentation.According to the characteristics of biochemical and temperature changes of starter during the fermentation of yellow rice wine,we designed an instantaneous temperature acquisition and control system based on LabVIEW and Siemens PLC300,combining with the column shape characteristic of fermentation tank.Meanwhile,we also established an instantaneous temperature treatment equation for fermentation tank based on Bessel function.The system would well solve problem of temperature fluctuation and uneven distribution of the temperature in the process of yellow rice wine fermentation.The results of simulation experiment showed that the system acquired the information of temperature accurately and immediately,and verified the accuracy,small error,robustness and practicability of the algorithm.
