米糠蛋白抗氧化特性研究

Study on antioxidant properties of rice bran protein

以米糠蛋白为原料,研究米糠蛋白对小鼠肝组织抗氧化能力及体外抗氧化作用。结果表明:小鼠灌胃米糠蛋白后,肝组织抗氧化指标变化显著,SOD、GSH-Px活性显著升高,MDA含量显著降低,说明米糠蛋白对小鼠肝组织具有较强的抗氧化能力;体外抗氧化试验结果表明,米糠蛋白对羟基自由基与DPPH均具有一定的清除能力。

Using rice bran protein as raw material, the antioxidation effect of rice bran protein on liver tissue of mice and the antioxidation ability in vitro were studied. The results showed that after intragastric administration, the antioxidant index of liver tissue changed significantly, the activity of SOD and GSH-Px increased significantly, and the MDA content decreased significantly,indicating that rice bran protein has strong antioxidant capacity in mouse liver tissue. The results of in vitro antioxidant tests showed that rice bran protein had certain ability to scavenge hydroxyl radicals and DPPH.
