摘要 针对大豆油常规低压氢化反应速度慢、反式脂肪酸大量生成的弊端,对大豆油氢化条件进行优化改进。主要考查了反应氢气压力、反应温度、反应时间、搅拌速度对氢化大豆油中碘值、反式脂肪酸含量的影响。通过正交试验,优化得出最佳氢化反应条件为氢气压力2.5 MPa,反应温度110℃,反应时间120 min,搅拌速度300 r/min,催化剂添加量1.5%。在此工艺条件下,氢化产品中反式脂肪酸含量为17.387%,与常规氢化相比,反式脂肪酸含量降低了16%左右。 The aim of this study was to improve the hydrogenation condition of soybean oil,in view of the defect of slow reaction rate and mass production of trans fatty acids resulting from the process of conventional low-pressure hydrogenation of soybean oil.The effects of hydrogen pressure,reaction temperature,reaction time and stirring speed on the iodine value and the amount of trans fatty acid in hydrogenated soybean oil were investigated.Based on the orthogonal experiments,the optimum extraction conditions were obtained as follows:hydrogen pressure 2.5 MPa,reaction temperature 110℃,reaction time 120 min,stirring speed 300 r/min,and the amount of catalyst amount 1.5%.And at the optimum conditions,the amount of trans fatty acids of hydrogenated products was 17.387%,reduced by 16%compared with conventional low-pressure hydrogenation.
