摘要
浓香型白酒发酵产生的黄浆水,富含有机酸、酯类等物质,可以收集并单独蒸馏、制备酯化液、串蒸或循环回窖等。应用灌窖、淋窖等方式,将酯化液应用于固态发酵过程中,有促进酒精酯化的作用。探讨了一种浓香型白酒酿酒用淋窖试验装置的设计与应用,该装置主要包括淋窖装置、黄浆水抽提装置等部分,其主要构件采用不锈钢材料,设备利用率高,尤其适用于酯化液应用于浓香型白酒酿酒生产的淋窖操作,或是黄浆水的抽提、循环回窖等操作。结果表明,该装置的应用可以避免淋窖操作过程中窖池封池泥的开挖,有利于酒醅的密封厌氧发酵,对酒醅的正常酒精发酵影响不大,对特优酒中己酸乙酯的含量提高起到积极的促进作用,在酿酒黄浆水及酒尾中有机酸类、醇类等有益成分的合理利用,提高资源综合利用率等方面起到的积极作用。
Yellow serofluid as a kind of Luzhou flavor liquor fermentation byproducts, which riched in organic acids, esters and other substances, can collect and separate distillation, esterification liquid preparation, on steam or recycling pit etc. The application of the esterification liquid to the solid state fermentation process has the effect of promoting the esterification of alcohol. The design and application of a test pit pouring device of Luzhou flavor liquor brewing discussesed in this paper, the device mainly comprises a pit pouring device, yellow serofluid extraction unit and other parts, the main components of stainless steel materials, high utilization rate of equipment, especially suitable for esterifying liquid used in the fermentation of Luzhou flavor liquor brewing pit pouring operation, or useding in extracting and recycling pit operation. The results showed that the application of this device can avoid the excavation pit pouring process of pit mud seal tank, a sealing for anaerobic fermentation of fermented grains, not the normal effects of alcohol fermentation liquor grains, the positive effects on the content of ethyl caproate to improve the quality of liquor. The rational use of organic acids, alcohols and other beneficial ingredients in wine and wine yellow serofluid, play a positive role to improve the comprehensive utilization of resources.
