质谱分析浓香型白酒洋河梦之蓝(手工班)微量成分的研究

摘要 洋河梦之蓝(手工班)是洋河集团近年来推出的高端绵柔型白酒。为了分析其微量成分组成,利用色谱-质谱联用技术,鉴定出454种微量成分。其中,酯、脂肪酸、醇、醛、酚、酮类等是中国传统白酒中主要的呈味物质,在该酒中超过300余种;呋喃、核苷类似物、萜烯、吡唑和吡嗪等具有潜在生物活性功能的物质,在该酒中检出48种。这些结果为研究绵柔型白酒风味和滋味来源及健康功效奠定了基础。 Yanghe Mengzhilan liquor (handmade) is a high-end Baijiu product launched by Yanghe Distillery in recent years. In this study, we used gas chromatography- mass spectrometry technology to analyze its trace components. 454 micro- ingredients in total were identified, including more than 300 kinds of main flavor-producing components of traditional Chinese Baijiu such as esters, fatty acids, alcohols, aldehydes, phenols and ketones etc., and 48 kinds of biologically active components such as furans, terpenes, pyrazols, pyrazines, and nucleoside analogues etc. These findings laid a foundation for further research on the source of flavor and healthcare functions of soft-type Baijiu.
