摘要
为探讨高压静电场处理对香菇采后保鲜效果的影响,以新鲜香菇为试材,随机分成2组,其中1组进行高压静电场处理,另1组作为对照实验(CK),在温度为7±1℃的条件下贮藏并分析其感官品质及生理生化变化。结果表明:与CK组相比,高压静电场处理对香菇保鲜品质及生理代谢具有一定的影响。高压静电场处理能显著抑制香菇呼吸代谢强度及内源性甲醛含量的积累,延缓多糖和维生素C的降解,降低失重率(p<0.05),但对感官分值和可溶性固形物含量影响差异不显著(p>0.05)。表明适宜的高压静电场处理可在一定程度上改善香菇的采后保鲜品质。
In order to investigate the effect of high-voltage electrostatic treatment on post-harvest preservation of Lentinus edodes ,fresh Lentinus edodes were randomly divided into two groups,one of which was not subjected to high-voltage electrostatic treatment and the other was subjected to high-voltage electrostatic treatment. 7 ± 1 ℃ storage and analysis of its sensory quality and physiological and biochemical changes. The results showed that compared with the blank group,the effect of high-voltage electrostatic treatment on fresh-keeping quality and physiological metabolism of Lentinus edodes was different. High-voltage electrostatic treatment could significantly inhibit respiration rate and the accumulation of endogenous formaldehyde content delay the degradation of polysaccharides and vitamin C,and reduce the rate of weight loss ( p <0.05),but had no significant difference between sensory scores and soluble solids ( p >0.05). Show that the appropriate High-voltage electrostatic treatment can improve post-harvest preservation quality of Lentinus edodes .
