摘要
目的调查野生菌中铅、镉、总汞和铝等金属元素含量的情况,为食品安全标准的制定和修订提供依据。方法应用电感耦合等离子体、原子吸收、原子荧光对野生菌的7种金属元素的含量进行检测。结果方法的检出限在0.01~0.6 mg/kg之间,回收率在94.5%~105.0%之间。野生菌中的7种元素检出率为100.0%,香菇中镉的合格率只有75.0%,牛肝菌中汞的合格率为95.0%。结论野生菌的测定方法可靠、回收率高;测得的金属元素,按标准评定限值虽然只有镉、汞有超标,但其它元素都有检出。铁、锰、铝暂无相应的的标准限值,根据检出的数据也不容忽视,希望相关部门加大监管力度,防止病从口入。
Objective To investigate the content of lead,cadmium,total Mercury and aluminum in wild bacteria,and provide the basis for the formulation and revision of food safety standards.Methods The content of 7 metal elements in wild bacteria was determined by inductively coupled plasma,atomic absorption and atomicfluorescence.Results he detection limit of the method was between 0.01~0.6 mg/kg and the recovery rate was between 94.5~105 %. The detection rate of 7 elements in wild bacteria was 100.0 %,and the pass rate of cadmium in shiitake mushrooms was only 75 %. The pass rate of mercury in bovine liver bacteria was 95.0 %.Conclusions The determination method of wild bacteria is reliable and the recovery rate is high. The measured metal elements were detected by other elements,although only cadmium and Mercury were exceeded according to the standard assessment limit values. Iron,manganese,aluminum have no corresponding standard limit values,according to the data detected can not be ignored,hope that the relevant departments to increase supervision efforts to prevent disease from entering from the mouth.
