摘要
在美食旅游概念阐述及美食旅游研究述评的基础上,对大湘西美食资源特点进行分析。大湘西属亚热带内陆山区,在食材采集、储存、烹调和饮食文化方面呈现原生态、腊味酸味繁多、多民族性等特点。另外,在美食旅游供应链理论的基础之上,从美食旅游的设施、事件、路线、组织等方面提出开发大湘西美食资源的具体策略。
Based on the elaboration of the concept of gastronomic tourism and the review of gastronomic tourism research,this paper analyzes the characteristics of the food resources of western Hunan.The western Hunan is a subtropical inland mountainous area,which brings the dietary characteristics of the original ecology,full of smoky and sour flavor,multi-ethnic.At the same time,under the research framework of the gastronomic tourism supply chain theory,this paper puts forward the specific development strategy for the food resources of western Hunan from the aspects of facilities,event,route and organization of gastronomic tourism.
