摘要
本文主要以山西省第十二届职业院校技能大赛的"中餐主题宴会设计"比赛的获奖作品"二青盛筵"为实例,从摆台设计的宴会主题、摆台要素、礼仪规范等三个方面阐释中餐主题宴会摆台设计的基础,以期以赛促教,不断完善教学理念;以教助产,将大赛成果落地,提升酒店业的社会影响力。
The paper takes“Grand Banquet of 2nd-Youth Games”as an example,which was highly honored in Chinese Cuisine Theme Banquet Design Competition of Shanxi 12th Vocational College Skill Contest.From three different perspectives,banquet theme,table set-up elements and etiquette,it expounds the basis of table set-up in Chinese cuisine theme banquet,with expectation that the related teaching concept can be improved and social influence of hospitality industry can be deepened.
