摘要
“食品工艺学”是食品科学与工程、食品质量与安全等专业的一门核心课程,常被作为食品专业的学位课程。为了克服目前“食品工艺学”课程教学中出现的问题,提高“食品工艺学”课程教学过程中的教学效果,提高学生学习积极性和分析解决问题的能力,以目前常见食品生产过程中的工艺问题为例构建案例式教学,探索案例式教学模式与方法在“食品工艺学”课程教学中的应用,旨在提高教学质量,培养食品专业应用型高级人才。
Food Technology is a core course of food science and engineering,food quality and safety and other specialties.It is often regarded as a degree course of food specialty.In order to overcome the existing problems in the course of Food Technology,improve the teaching effect in the course of Food Technology and improve the students'learning enthusiasm and ability to analyze and solve problems,this paper took the process problems in the current common food production process as an example to construct case-based teaching,and explored the case-based teaching mode and method in the course of Food Technology.The application of teaching aimed at improving the teaching quality and training high-level applied talents of food specialty.
