羊血中含有大量蛋白质、维生素、血红素、微量元素等多种活性物质,有极高的营养价值。但我国目前羊血资源浪费较多,且真正应用于加工生产少之又少。文章综述其在食用、保健与药用和其他方面的应用,实现羊血的深加工利用,不仅能解决羊血随意排放造成的环境污染,而且能促进各类高附加值食品、保健品和药品产业的发展。

Sheep blood has very high nutritional value,it is abundant of the proteins,vitamins,heme,trace elements and other active substances.Due to various reasons,sheep blood is wasted a lot in our country at present and rarely used in processing and production.This review summarized the application in food,health care,medicine and other fields.Utilizing the sheep blood can not only solve the environmental pollution caused by the random discharge,but also promote the development of various high value-added food,health care products and medicine industries.
