β-胡萝卜素软胶囊配料工艺改进

摘要 胡萝卜素软胶囊是一款以β-胡萝卜素、大豆油为主要原料,具有补充β-胡萝卜素保健功能的保健食品。市场上同类产品多为囊皮着色、内容物为混悬液,而我司该产品要求囊皮无色、内容物为红色透明油状;且β-胡萝卜素本为难溶物质,需高温加热促使溶解,故该产品存在几个工艺难点:1、高温加热可导致内容物含量衰减,酸价及过氧化值升高,容易超出企标要求;2、快速冷却有结晶析出,不符合感官要求。按照原工艺配料生产,发现软胶囊内容物有结晶析出现象,呈颗粒状,影响感官指标。研究以溶解油比例(%)、溶解油升温时间(min)、溶解时间(min)、稀释油温度(℃)、稀释油比例(%)、稀释油升温时间(min)、料液感官为考核指标,确定β-胡萝卜素软胶囊配料最优工艺参数。通过三批产品制备,比较新工艺与原工艺在感官、含量、酸价、过氧化值符合标准等方面差异,比较新工艺与原工艺在制备时间、操作上的差异,确定β-胡萝卜素软胶囊配料新工艺稳定,理化指标符合企标要求,能替代原工艺。 β-carotene soft capsule is a kind of health food with β-carotene and soybean oil as the main raw material, which can supplement the health function of β-carotene. Most of the similar products in the market are colored with sac skin, and the contents are suspensions, while our products require that the skins be colorless, and the contents are red, transparent and oily;and the β-carotene is difficult to dissolve and needs to be heated at high temperature to promote dissolution. Therefore, there are several technical difficulties in this product, such as: 1, high temperature heating can lead to attenuation of content, acid value and peroxide value increase, easily exceed the requirements of standard, rapid cooling has crystallization precipitation, which does not meet the sensory requirements. According to the original technology, it was found that the contents of soft capsules were crystallized and precipitated, which affected the sensory indexes. The optimum technological parameters of β-carotene soft capsules were determined by the following parameters: dissolved oil ratio (%), dissolved oil temperature (min), dilution oil ratio (%), and diluted oil heating time (min),). Through the preparation of three batches of products, the differences in sensory, content, acid value and peroxide value between the new process and the original process were compared, and the differences in preparation time and operation between the new process and the original process were compared. The new technology of β-carotene soft capsule was determined to be stable, the physicochemical index was in line with the standard requirement, and the original process could be replaced by β-carotene soft capsule.
