摘要
目的了解2015~2018年龙岩市市售食品中蜡样芽胞杆菌的污染状况,为制定有效的监管措施提供依据。方法按照《国家食品污染和有害因素风险监测工作手册》中的方法对龙岩市不同流通环节的食品样品中的蜡样芽胞杆菌进行监测分析。结果 321份样品中共检出蜡样芽胞杆菌37株,总检出率为11.53%;2015年检出率最高(16.33%),其次为2016年(16.07%);不同年份检出率呈下降趋势,差异有统计学意义(P<0.05)。学生午餐中蜡样芽胞杆菌的检出率最高(40.00%),其次为即食豆制品(22.73%)、流动快餐(17.04%)、儿童食品(13.33%),不同种类食品检出率差异有统计学意义(P<0.05)。结论龙岩市多种食品存在蜡样芽胞杆菌污染,存在引发公共卫生问题的安全隐患。
Objective To understand the contamination status of bacillus cereusin commercially available food during 2015-2018 in Longyan city,so as to provide the basis for developing effective supervision measures. Methods Bacillus cereus contamination in different kinds of food collected from catering service and circulation industry was monitored and analyzed by methods from the National Manual for Risk Monitoring of Chemical Contamination and Hazardous Factors. Results A total of 37 bacillus cereus strains were detected from 321 food samples,with the total detection rate of 11.53%;the detection rate of bacillus cereus was the highest in 2015(16.33%),followed by it in 2016(16.07%);the detection rate showed an downward trend among years with statistical significant difference(P<0.05).The detection rate of bacillus cereus in student lunch was the highest(40.00%),followed by ready to eat soy products(22.73%),fast food(17.04%) and infant food(13.33%).There were statistically significant differences in detection rates of bacillus cereus in different kinds of food(P<0.05). Conclusion There is contamination of bacillus cereus in different kinds of food in Longyan city,which may lead to public health problems.
