摘要
为了改善四川地方猪种的肉质,用巴克夏和杜洛克猪作为父本选育新猪种(DLY和SH),采用氯仿—甲醇(2∶1)混合液萃取猪肉中的脂质,KOH-MeOH和BF3-MeOH甲脂化处理,并利用GC-MS法分析脂质化合物并对其含量进行比较.实验结果表明:DLY系猪肉含肉豆蔻酸、棕榈酸、棕榈油酸、硬脂酸、油酸、十八碳二烯酸、11-二十碳烯酸、花生四烯酸等17种脂类物质,其中含量最多的是油酸(41.58%);SH系猪肉含肉豆蔻酸、棕榈酸、棕榈油酸、硬脂酸、十八碳酸、十八碳二烯酸、亚麻酸、11-二十碳烯酸等8种脂类物质,其中含量最高的是十八碳酸(41.88%);猪肉中脂质化学成分以酸类为主,以油酸含量最为突出,其中,C16和C18的含量达到90%以上,是肌内脂质磷脂的主要成分.实验从猪肉脂质的组成成分和含量的角度为不同选育猪种的品质评价提供了参考依据.
In order to improve the meat quality of Sichuan local pig breeds,Berkshire and Duroc pigs are selected as the male parent to breed new pig breeds(DLY and SH).Chloroform-methanol(2∶1) mixture is used to extract lipids from pork.KOH-MeOH and BF3-MeOH are used for methylated treatment.Then,the lipid compounds are analyzed by GC-MS and their contents are compared.The experimental results show that DLY series of pork contains 17 kinds of lipids such as myristic acid,palmitic acid,palmitic oleic acid,stearic acid,oleic acid,eighteen eNIC acid,11-twenty artic acid,and peanut four eNIC acid.Oleic acid comprises the largets proportion,up to 41.58%.SH series pork contains 8 kinds of lipids such as myristic acid,palmitic acid,palmitic oleic acid,stearic acid,eighteen carbonic acid,eighteen carbonic two enoic acid,linolenic acid,and 11-twenty carbonic acid.The greatest perentage is eighteen carbonic acid,up to 41.88%.The lipid chemical composition of pork is mainly acid,and the content of oleic acid is the most prominent.The percentage of C 16 and C 18 is above 90%,which is the main component of lipid phospholipid in muscle.This experiment provides a reference basis for the quality evaluation of different breeding pigs from the perspective of composition and content of pork lipids.
