摘要
黄曲霉毒素是一类化学结构类似的化合物,作为一种生物毒素严重危害人体和动物健康。笔者主要综述了黄曲霉毒素的来源、分类、危害、检测方法、脱毒技术,并根据植物精油的活性成分,总结了近年来有关植物精油对黄曲霉毒素抑制作用的研究,为其在生产中的合理应用提供参考。
Aflatoxins were the compounds characterized by the similar chemical structure,which was harm to the health of human and animal.In this paper,the sources,classification,hazards,detection methods and detoxification techniques of aflatoxins were reviewed,the recent studies on the inhibitory effects of plant essential oils on aflatoxins were summarized based on their active ingredients,so as to provide the reference for their rational application in production.
