摘要
综述了辐照技术对坚果采后营养物质变化(脂类物质、蛋白质、维生素及碳水化合物)、生理代谢变化(呼吸强度、酶活性、细胞超微结构及激素)和感官品质影响的研究进展,对于探索坚果采后生理生化变化和贮藏保鲜以及营养价值之间的关系具有参考价值,有利于推进辐照技术在坚果加工和贮藏中的实践应用。
In this paper,the progress of the effects of irradiation on nutrients(lipids,proteins,vitamins and carbohydrates),physiological metabolism(respiratory intensity,enzymatic activity,cell ultrastructure and hormone)and sensory characteristics of postharvest nuts was reviewed.It is very referential to explore the relationship between physiological and biochemical changes,storage,fresh-keeping and nutritional value of postharvest nuts.And it is conducive to promote the practical application of irradiation technology in the processing and storage of nuts.
