摘要 香蕉是一种典型的呼吸跃变型水果,后熟过程发生了一系列与成熟、衰老有关的生理生化变化,再加上病原菌的侵染,导致香蕉贮藏寿命变短,降低商品价值。综述了香蕉果实在物理保鲜技术(包括气调保鲜、变温保鲜、辐照保鲜)、化学保鲜技术(应用乙烯拮抗剂和吸收剂、化学防腐剂)和生物保鲜技术方面的研究现状,以期为香蕉贮藏保鲜的研究与生产应用提供参考。 Banana is a typical kind of respiratory climactic fruit,that is,a series of physiological and biochemical changes related to maturity and senescence are occurred in the ripening process.Along with the infection of pathogenic bacteria,banana has become shorter storage life and lower commodity value.The research status of banana fruits in physical preservation technology(including modified atmosphere packaging,variable temperature preservation technology,and irradiation preservation technology),chemical preservation technology(by using ethylene antagonist and absorbent,chemical preservative)and biological preservation technology were summarized in this paper,in order to provide references for the research on the storage and preservation of banana and its production application.
