摘要
由于重金属含量超标而造成的食品安全事故越来越多,对重金属的检测变得尤其重要。通过介绍电感耦合等离子体质谱(ICP-MS)法的工作原理、优缺点及其半定量检测方法,阐述了ICP-MS单独在食品中的应用,并分析与其他检测技术联用对食品中重金属元素形态的影响。结果表明,ICP-MS能快速准确地测定食品中重金属元素,未来在食品检测中有很好的发展前景。
There are more and more food safety accidents caused by excessive heavy metal contents,and the detection of heavy metals become particularly important.This paper introduced the working principle,advantages and disadvantages of ICP-MS and its semi-quantitative detection method.The application of ICP-MS in food alone and the analysis of heavy metal elements in food in combination with other detection techniques were described.ICP-MS could rapidly and accurately determine the heavy metal elements in food,and it had a good development prospect in food detection in the future.
