摘要
以食用色素的种类为依据,论述食用色素的来源、特点、允许使用种类、安全性评价和检测方法,介绍同时检测多种合成色素的具体方法和相关研究成果,为科学使用和快速检测食用色素提供参考。
Based on the types of food pigments, this paper discusses the sources, characteristics, permitted types, safety evaluation and detection methods of food pigments, and introduces the specific methods and related research results of simultaneous detection of various synthetic pigments, in order to provide reference for scientific use and rapid detection of food pigments.
