摘要
研究了香菜根提取液在秋葵饮料中的应用,结果表明,香菜根提取液以添加量1%加入秋葵饮料最佳,秋葵饮料中抗坏血酸≥1.4mg/100mL(以AA计),可溶性固形物≥7.5%(以20℃折光法计)。检测结果表明,秋葵饮料中菌落总数的数值≤100CFU/mL,大肠菌群的数值≤3MPN/100mL,金黄色葡萄球、菌沙门菌及志贺菌不允许检出。
The application of coriander root extract in okra beverage was studied in this paper. The results showed that the optimum concentration of coriander root extract was 1% in okra beverage;ascorbic acid was more than 1.4 mg/100 mL in okra beverage(AA),soluble solids were more than 7.5%(refractive method at 20 ℃). The results showed that the total number of colonies in okra beverage was less than 100 CFU/mL,and the number of coliforms was less than 3 MPN/100 mL. Staphylococcus aureus,Salmonella and Shigella are not allowed to be detected.
