摘要
建水紫陶汽锅因汽锅鸡而闻名于世,汽锅的烹调方式更是一种贴近自然,保持食材原汁原味的烹调方式,随着建水紫陶产业的蓬勃发展,建水紫陶汽锅也面临新的挑战和发展机遇。文章从建水紫陶汽锅从器型、生产工艺、产品质量、烹调方式等四方面对建水紫陶汽锅进行深入分析研究,为建水紫陶汽锅的发展提供奠定研究基础。
The steam pot of Jianshui purple pottery is famous for its steam-pot chicken. And the steam-pot cooking is close to nature for keeping the food material original. With the rapid development of Jianshui purple pottery industry, the steam-pot also faces new challenges as well as opportunities. This paper makes an in-depth analysis and study of Jianshui purple pottery steam-pot from four aspects – its type, the production process, product quality and cooking method – so as to lay a solid research foundation for the development of Jianshui purple pottery steam-pot.
