摘要
作为人类文化发展的基石和前提,饮食既是不同文化形态发展的诱因,亦是促进文化整合的纽带。饮食文化受承载它的文化生态系统影响,文化生态系统的历时嬗变又刺激着饮食文化的时代变迁。当今中国,传统饮食文化的生态空间正不断遭遇现代化发展挤压与侵蚀,饮食文化生态失衡滋生的诸多困境令人担忧。在文化生态保护背景下,探讨三峡饮食文化生成的自然与人文环境、其发展演变的历程及其在三峡文化生态系统中的地位与功能,进而探索饮食文化保护传承与三峡文化生态保护路径之间的有机联系,无疑具有重要的现实意义。
As the cornerstone and premise of the development of human culture, diet is not only the developing cause of different cultural forms, but also the link to promote cultural integration. The food culture is influenced by the cultural ecosystem that carries it, and the vicissitudes of the cultural ecosystem have stimulated the changing of the food culture times. In today’s China, the ecological space of traditional diet culture is constantly being squeezed and eroded by the development of modernization, and many dilemmas caused by the imbalance of diet culture ecology make people worried. It is undoubtedly of great practical significance to explore the natural and humanistic environment of the Three Gorges food culture, its development and evolution, its status and function in the Three Gorges cultural ecosystem, then to explore the organic connection between the inheritance of food culture protection and the cultural and ecological protection path of the Three Gorges.
