摘要
小龙虾肉质鲜美、肌肉蛋白质含量丰富,营养价值高,养殖量较大。但是,除肌肉以外的部分,即虾壳,则大多被丢弃,加工程度和利用水平都比较低。已有的小龙虾虾壳应用方面的研究主要以对虾壳中活性成分提取工艺的探索和活性成分含量的检测为主,对活性成分的应用效果,以及虾壳在动物饲料中的应用研究均相对较少。在文献调查的基础上,总结和分析小龙虾虾壳在应用研究方面取得的一些进展以及存在的一些问题,旨在促进小龙虾虾壳的开发与利用,解决小龙虾虾壳资源的浪费问题,达到废物利用与减少污染的双重目的。
Crayfish muscle is delicious and rich in protein,so it is nutritional and cultured widely.However,crayfish shell is usually discarded as wastes because of its low processing and utilization level.In addition,existing researches on the crayfish shell mainly focus on the extraction and detection of active ingredients.Otherwise,both researches on effects of different active ingredients from crayfish shell and utilization of crayfish shell meal in animal feed are relatively few.On the basis of literature investigation,summarizing and analyzing the research progress and problems in applied research of crayfish shell will be benefit to promote the development and utilization of crayfish shells,which will contribute to solve the waste problem brought by crayfish shell,and to utilize the crayfish wastes and reduce environmental pollution.
