2014~2018年太原市部分市售食品及其包装材料重金属含量监测 被引量:3

摘要 目的了解太原市部分市售食品及食品包装材料重金属污染状况,为食品安全监管提供科学依据。方法2014~2018年采集太原市市售食品及食品包装材料样品共1458份,监测镉、铅、总汞、总砷含量。结果检测1458份样品,合格的1455份,合格率为99.79%。市售食品豆与豆制品中镉检出率最高(92.86%),食品包装材料、豆与豆制品、肉与肉制品、水产动物及其制品、调味品中铅检出率均为100.00%,总汞、总砷检出率以水产动物及其制品最高,分别为78.26%、100.00%。散装食品中镉、总砷检出率高于定型包装食品及食品包装材料(P<0.01、<0.05)。农贸市场采集的食品及食品包装材料中镉、铅、总汞及总砷检出率分别为78.64%、78.47%、26.92%、46.70%,高于其他采集地点。结论散装食品是太原市食品安全监管的重点,农贸市场是食品销售流通环节监管的重点。 Objective To understand the situation of the food contaminated with heavy metals in some commercial food and food packaging materials,so as to provide scientific basis for food safety monitoring. Methods A total of 1 458 samples of food and food packaging materials were collected to monitor the cadmium,lead,total mercury and total arsenic content. Results A total of 1 458 samples were detected,including 1 455 qualified samples,with the qualified rate of 99.79%.The highest detection rate of cadmium was beans and soy products(92.86%).The detection rate of lead in food packaging materials,beans and soy products,meat and meat products,aquatic animals and products,condiments was 100.00%.The detection rate of total mercury and total arsenic was the highest in aquatic animals and products,which was 78.26% and 100.00% respectively.The detection rate of cadmium in bulk foods and total arsenic was higher than that of fixed packaging food and food packaging materials(P<0.01,P<0.05).The detection rates of cadmium,lead,total mercury and total arsenic in food and food packaging materials collected by farmers’ markets were significantly higher than other collection sites,and the detection rate was 78.64%,78.47%,26.92% and 46.70% respectively. Conclusion The bulk food is the focus of food safety supervision in Taiyuan city,and the farmers market is the focal point of food sales and circulation supervision.
