摘要
葡萄叶通常作为废弃物被丢弃,但其富含黄酮等多种生物活性物质。以葡萄叶为原料,采用湿法制粒压片工艺制成咀嚼片,通过单因素实验、正交实验和感官评定等探讨了葡萄叶咀嚼片的最佳配方,并测定了其总黄酮、白藜芦醇含量。结果表明葡萄叶咀嚼片的最佳配方为:葡萄叶粉40%、低聚果糖30%、甘露糖醇15%、微晶纤维素15%、柠檬酸4%、硬脂酸镁3%,制得的咀嚼片质地均匀、口感细腻、酸甜可口、具有独特葡萄叶清香,其总黄酮含量为49.33 mg/g、白藜芦醇含量为170.46μg/g。葡萄叶咀嚼片不仅能提高葡萄叶资源的利用,还能满足广大消费者的健康需求。
Grape leaves are usually discarded as waste, but they are rich in many bioactive substances such as flavonoids. By taking grape leaves as raw material, the best formula of grape leaf chewing tablets was discussed by means of single factor test, orthogonal test and sensory evaluation, and the content of total flavonoids and resveratrol was determined. The experimental results showed that the best formulas for grape leaf chewing tablets were: 40% grape leaf powder, 30% oligosaccharide, 15% mannitol, 15%microcrystalline cellulose, 4% citric acid, and 3% stearate magnesium. The prepared chewing tablet had a uniform texture, delicate taste, sweet and sour, and had a unique grape leaf fragrance. Its total flavonoid content was 49.33 mg/g and resveratrol content was 170.46 μg/g. It can not only improve the utilization of grape leaf resources, but also meet the health needs of consumers.
