摘要 研究红芸豆中多酚的超声辅助提取工艺。在单因素试验基础上,采用正交试验优化提取工艺。结果表明:红云豆多酚超声辅助提取最佳工艺条件为料液比1∶80(g/mL)、超声功率280W、提取温度60℃、乙醇浓度30%和提取时间25min。该工艺条件下,红芸豆中多酚提取率为3.870mg/g。 The ultrasonic assisted extraction process of polyphenols in red kidney beans was studied.On the basis of single factor experiment,the orthogonal experiment was used to optimize the process.The results showed that the optimum conditions were as follows:solid-liquid ratio 1∶80 (g/mL),ultrasonic power 280 W,extraction temperature 60 ℃,ethanol concentration 30 % and extraction time 25 min.Under these conditions,the extraction yield of polyphenols in red kidney beans was 3.870 mg/gs.
