摘要 干燥是虾粉加工的关键工序之一,是影响虾粉品质的重要因素,适宜的干燥技术和设备可有效保证南极磷虾虾粉质量,提高南极磷虾虾粉生产效率。综述了几种常用的食品干燥技术和设备的原理、适应物料形式以及优缺点,并根据南极磷虾的物料特性,对这几种干燥技术和设备在南极磷虾虾粉加工中的应用前景和可行性进行了分析,旨在为南极磷虾干燥技术创新和干燥设备研发提供理论依据与技术支撑。 Drying is one of the key processes of shrimp powder processing, it is an important influence factor of the quality. Appropriate drying technology and equipment can effectively ensure the quality and improve the production efficiency of Antarctic krill powder. In this paper, the principle, material form, advantages and disadvantages of several commonly drying techniques and equipment which used in food processing were summarized. According to the material characteristics of Antarctic krill, the application prospect and feasibility of these drying techniques and equipment in the processing of Antarctic krill powder were analyzed. The purpose was to provide theoretical basis and technical support for the innovation of drying technology and research and development of drying equipment of Antarctic krill.
