果胶酶的酶学特性及其在畜禽生产中的应用 被引量:12

摘要 果胶是植物源饲料原料中一种常见的抗营养因子,进入畜禽消化道后会影响动物对营养物质的消化吸收。果胶酶是指能够分解果胶质的多种酶的总称。动物体细胞由于不存在细胞壁结构,故机体内不能分泌产生果胶酶,一般在畜禽生产中均为外源添加。在饲粮中添加适宜水平果胶酶可改善动物生产性能,提高畜产品品质。本文就果胶酶的酶学特性、作用机理及其应用效果进行了综述,为果胶酶在饲料生产中进一步推广提供参考。 Pectin is a common anti-nutrient factor in plant feed materials,which will affect the digestion and absorption of nutrients by animals after entering the digestive tract of livestock and poultry.Pectinase is a heterogeneous group of related enzymes that can decompose the pectisubstances.Pectinase cannot be secreted in the body because there is no cell wall structure in animal body cells,it is generally exogenous addition in livestock and poultry production.Adding appropriate levels of pectinase into the diet can improve the performance of animal production and the quality of animal products.The enzymatic properties,mechanism and application effect of pectinase was reviewed in this paper,which provides a theoretical basis and instruction for their application in feed production.
