摘要
迄今为止,日本的食研究与高等教育主要集中在农学、营养学、烹饪学等方面。近年,人文、社会科学方面的食研究越发活跃,各大学陆续开设了相关的学部、学科。我们将以宫城大学、龙谷大学、立命馆大学为例介绍相关情况。此外,以“和食”成为联合国教科文组织的非物质遗产为契机,京都府立大学也计划在2019年开设和食文化学科,并与此同时创办“和食文化学会”。
Until now,Japanese food research and higher education have mainly focused on agriculture,nutrition,culinary science and so on.In recent years,food studies in the humanities and social sciences have become more and more active,and universities have opened related departments and subject.We will introduce Miyagi University,Ryukoku University,and Ritsumeikan University as examples.In addition,as a result of the“Japannese food”becoming an intangible heritage of UNESCO,Kyoto Prefectural University plans to open the Department of Japanese Food Culture in 2019,and at the same time establish the Society of Japanese Food Studies.
