摘要 目的 通过优化玫瑰花色素提取条件,为生产使用食用色素提供理论保障和科学依据,为玫瑰花色素的进一步研究提供资料。方法 以云南产玫瑰花为实验样品,采用超声波辅助提取法对玫瑰花进行色素提取,提取过程中通过控制提取溶剂种类、提取溶剂pH值、超声波功率、超声温度、超声时间、料液比进行单因素实验,在此基础上进行正交实验,并用紫外可见分光光度法对玫瑰花色素含量进行测定,来确定最佳的提取条件。结果 玫瑰花色素最佳提取条件为提取时间为90min、提取温度为60℃、超声功率为90W、料液比为1∶10(g∶mL)。结论 本实验确定了玫瑰花色素的最佳提取条件,为玫瑰花色素提取提供了科学依据。 Objective To optimize the extraction of the rose pigment and to provide the scientific basis for the further study. Methods Yunnan roses were employed as samples,and the ultrasonic assisted extraction was used to extract the rose pigment.The single factor experiments were carried out by controlling the types of extraction solvent,extraction solvent,pH value,ultrasonic power,ultrasonic temperature,ultrasonic time,material liquid.The orthogonal experiments was made on the basis of above work,and uv-vis spectrophotometry was selected to measure the rose pigment content,also to determine the optimal extracting conditions. Results The optimal extraction condition were as follows:extraction time was 90 min,temperature was 60 ℃,ultrasonic power was 90 W,the material ratio of 1∶10( g∶mL ). Conclusion The optimal extraction conditions of rose pigment were determined,which provided a scientific basis for the extraction of rose pigment.
