高校标准化建设食堂厨房功能及流线改造设计

摘要 标准化一直是高等院校食堂建设的目标。随着日益严格的食品安全要求,大量的高校食堂面临改造,其中厨房的改造是核心。通过对高等院校学生食堂厨房开展实地调查和需求解析,找出其存在的问题,并基于标准化食堂建设目标,以新的食品安全操作规程和饮食建筑设计标准为指南,从空间再分配、合理布局和强化空间界限三个方面提出厨房改造的具体措施,并通过改造设计实践为今后类似的高校食堂厨房改造设计提供参考。 Standardized canteen construction has always been the goal of colleges and universities.With the increasingly stringent food safety requirements,a large number of canteens in colleges and universities are facing changes.The renewing of the kitchen is the core.This paper conducted an on-thespot investigation and needs analysis to study the transformation strategies of canteen kitchen functions and streamlines based on the standardized goal,used the new food safety operation regulations and diet building design codes as guides.It proposed specific renewal strategies from space redistribution,rational layouts and space boundaries strengthening,and a specific renewal design practice was discussed later,expecting to provide references for the similar college canteen kitchen renovation in the future.
