摘要
采用现行有效的标准方法对脊尾白虾"科苏红1号"的肌肉营养成分进行分析。结果显示,脊尾白虾"科苏红1号"中含肉率、水分、粗蛋白、粗脂肪和粗灰分含量分别为47.32%±0.14%, 78.88%±0.18%, 20.22%±0.32%,0.15%±0.03%和1.76%±0.11%。检测了脊尾白虾"科苏红1号"肌肉中的17种常规氨基酸,其氨基酸总量为17.76%±0.18%,其中EAA/TAA的值为36.47%, EAA/NEAA的值为84.93%,符合FAO/WHO的理想模式,且其鲜味氨基酸占总氨基酸比例为42.96%。脊尾白虾"科苏红1号"肌肉中含有21种脂肪酸,其中多不饱和脂肪酸占比为69.23%±0.23%, DHA+EPA含量占比为29.26%±0.24%。结果表明"科苏红1号"脊尾白虾是一种含高蛋白质的水产品。
The meat nutritive composition of ridgetail white prawn "Kesuhong No.1" was analyzed. The results showed that the meat rate, content of moisture, crude protein, crude fat and crude ash of ridgetail white prawn "Kesuhong No.1" were 47.32%±0.14%, 78.88%±0.18%, 20.22%±0.32%, 0.15%±0.03% and 1.76%±0.11%, respectively. A total of 17 kinds of common amino acids in ridgetail white prawn "Kesuhong No.1" were tested. The TAA was 17.76%±0.18%, the EAA/TAA was 36.47%, and the EAA/NEAA was 84.93%. The results met the Food and Agriculture Organization of the United Nations/World Health Organization(FAO/WHO) Standard. The DAA/TAA was 42.96%. Ridgetail white prawn "Kesuhong No.1" was rich in 21 kinds of fatty acids, and the ratio of PUFA was 69.2%3±0.23%. It was also rich in DHA and EPA, and the ratio was 29.26%±0.24%. The experimental results showed that the ridgetail white prawn "Kesuhong No.1" was a high quality aquatic product.
