摘要 建立了食品中牛磺酸、维B1、维B2、烟酸、烟酰胺、吡哆醇、吡哆醛、吡哆胺、泛酸、叶酸、维B12、生物素等12种水溶性维生素含量的高效液相色谱-串联质谱检测方法。样品通过水提取后,加酸除杂,采用液相色谱-串联质谱法分离测定。12种水溶性维生素在相应质量浓度范围内线性良好,R^2>0.999,添加20.00~50.00μg/kg时的加标回收率为78.5%~89.4%,相对标准偏差为2.00%~4.99%,方法检测限为5.0μg/kg。该方法简便、快速、准确,可用于食品中12种水溶性维生素的定性、定量分析。 A high performance liquid chromatography-tandem mass spectrometry(LC-MS)method was developed for the determination of 12 water-soluble vitamins in foods,including taurine,VB1,VB2,nicotinic acid,nicotinamide,pyridoxine,pyridoxal,pyridoxamine,pantothenic acid,folic acid,VB12 and biotin. Samples were extracted by water,then impurities were removed by adding acid. The samples were separated and determined by liquid chromatography-tandem mass spectrometry. The linearity of 12 water-soluble vitamins was good in the corresponding concentration range,the R^2>0.999. When 20.00~50.00 μg/kg was added,the recovery was 78.5%~89.4%,the relative standard deviation was 2.00%~4.99%,and the detection limit was 5.0 μg/kg. The method is simple,rapid and accurate,and can be used for qualitative and quantitative analysis of 12 water-soluble vitamins in food.
