胶原蛋白作为一类特殊的蛋白质广泛分布在各种动物的骨、皮等组织中,胶原蛋白的氨基酸组成与一般的蛋白质不同,主要由甘氨酸连接两个其他氨基酸的重复结构组成,一般来说,甘氨酸占胶原蛋白氨基酸总含量的三分之一左右。同时,甘氨酸含量丰富与胶原蛋白具有特殊的三螺旋结构相适应。胶原蛋白分类一般由罗马数字标示。本文对胶原蛋白的结构及几类胶原蛋白进行了简介。
