摘要 了解某铁路单位职工日常膳食营养状况,分析当前膳食营养状况存在问题,提出营养改善方案,为创建铁路健康食堂和铁路职工健康行动计划提供参考。调查统计辖区某铁路站段食堂日常就餐职工的膳食摄入情况,依据相关标准进行评价。结果表明,该单位职工日常水果类、水产类、奶及奶制品类摄入不足,会导致钙质和膳食纤维不足;畜肉类、烹调油摄入量偏高会造成胆固醇过高;维生素、矿物质摄入不均衡;脂肪热比及晚餐能量占比过高。建议食堂增加水果、水产、奶及奶制品类食物供应,减少畜肉类食物供应和烹调油的使用量,降低脂肪热比,改进烹调工艺,减少食物中微量营养素的流失;加强健康营养教育和知识宣传,促进职工改变生活方式,合理选择食物和三餐摄入量,改善身体营养状况,提高健康素质。 To understand the daily dietary and nutritional status of employees in a railway unit, analyze the existing problems in the current dietary and nutritional status, and put forward nutrition improvement plans, so as to provide reference for the establishment of railway health canteens and health action plans for railway employees. To investigate and count the dietary intake of the staff dining in the canteen of a railway station in the jurisdiction area, and to evaluate according to relevant standards. The results showed that insufficient intake of fruits, aquatic products, milk and dairy products would lead to insufficient calcium and dietary fiber. High intake of livestock meat and cooking oil will cause high cholesterol. Unbalanced intake of vitamins and minerals;Fat heat ratio and supper energy ratio are too high. It is suggested that canteens increase the supply of fruits, aquatic products, milk and dairy products, reduce the supply of meat for livestock and the use of cooking oil, reduce the fat-to-heat ratio, improve cooking techniques and reduce the loss of micronutrients in food. Strengthen health and nutrition education and knowledge propaganda, promote workers to change their lifestyle, reasonably choose food and three meals intake, improve physical nutrition, improve health quality.
