摘要
果蔬的干燥加工能延长果蔬储存期、减小果蔬体积,便于运输。本文对当前市场上常见果蔬(红枣、柠檬、芒果、菠萝蜜、香蕉)的不同干燥工艺和技术进行了文献调研,对常用果蔬干燥技术在干燥模型、最优干燥工艺以及干燥产品质量等方面进行了分析。发现热泵干燥是一种节约能源、环境友好并且适用于常见果蔬干燥的技术,值得关注和推广应用。
The drying process of fruits and vegetables can prolong the storage period and reduce their volume for transportation. In this paper,different drying processes and techniques of common fruits and vegetables (red dates,lemons,mangoes,jackfruits,bananas) on the market have been summarized;drying model,drying process,and drying quality have been analyzed. It is found that heat pump drying is a technology that is energy-saving,environmentally friendly. Therefore it is suitable for drying common fruits and vegetables,and is worthy of attention and popularization.
