摘要 为建立一种快速测定调味品中氯化物的新方法,以鸡精、味精为样品,固定时间超声波浸提后,用浓度直读法进行测定。结果表明:样品质量为5.0000g,柠檬酸钠为0.20g/L,pH为6.00,硝酸钾为1.40mol/L时,加标回收率在95.01%~101.32%之间,氯离子的检出限为0.0131mmol/L,相对标准偏差小于2.5%(n=5)。该法与国家标准对照测定,经显著性检验表明,两种方法之间不存在显著性差异。该法所用仪器便携、成本低廉、读数直观、快速简便、计算简单,利于现场快速检测,是测定调味品中氯化物的新型分析技术和较好方法,有良好的推广价值和应用前景。 In order to establish a new method for rapid determination of chloride in condiments,chicken essence and monosodium glutamate are used as the samples.After ultrasonic extraction for a fixed time,the concentration of chloride in condiments is determined by direct reading method.The results show that when the sample mass is 5.0000 g,sodium citrate is 0.20 g/L,pH is 6.00 and potassium nitrate is 1.40 mol/L,the recoveries are between 95.01%and 101.32%,the detection limit of chloride ion is 0.0131 mmol/L,and the relative standard deviation is less than 2.5%(n=5).The method is compared with the national standard.The significance test shows that there is no significant difference between the two methods.The instrument used in this method is portable,low-cost,intuitive reading,fast,simple and easy to calculate.It is a new analytical technique and a better method for the determination of chloride in condiments.It has good promotion value and application prospect.
