摘要
粮食蛋白是世界上丰富的廉价蛋白资源,也是我国膳食蛋白质的主要来源,具有过敏性低、氨基酸配比合理、功能性强等优点。本文通过对各种粮食作物蛋白的微胶囊研究现状的综述,为拓宽粮食蛋白应用范围提供新思路,使其更广泛地应用于大宗食品和功能性食品中。
Food protein is a cheap and abundant protein resource in the world. It is also the main source of dietary protein in our country. It has the advantages of low allergy, reasonable amino acid ratio and strong functionality. In this paper, the research status of microencapsulation of various food crop proteins was summarized, in order to provide new ideas for widening the application scope of food protein, and make it more widely used in bulk food and functional food.
