摘要
正所谓“民以食为天”,目前食品行业正处于蒸蒸日上的发展状态,为了满足人们挑剔的味蕾,尤其是在火锅味道上的感受,本文以纯品酵母提取物进行尝试,利用对比实验,对火锅底料中加入酵母提取物对火锅底料风味的提升作用进行了详细的分析,发现加入酵母提取物后火锅底料风味获得了明显提升。
The so-called “people take food as their heaven” is developing rapidly in the food industry. In order to satisfy people’s picky taste buds, especially the taste of chafing dish bottom, this paper makes a new attempt to extract pure yeast extract, and uses the methods of comparative experiments and sensory comparative experiments to extract this kind of yeast. The effect of adding chafing dish base material to enhance the flavor of chafing dish base material was analyzed in detail. It was found that the flavor of chafing dish base material had been significantly improved.
