摘要
消泡剂因其使用方便,成本低廉,能耗少而在发酵工业中得到广泛应用。每种消泡剂都具有一定的消泡效果,但也都有可能对培养环境以及细胞生长产生有利或有害的影响,进而影响目的产物的合成。因此,在选用消泡剂时要综合考虑其种类、功能、添加浓度及其对发酵过程产生的影响,以达到最佳的效果。该文对消泡剂的性能、消泡机制、生物学效应及筛选方法等进行综述,为消泡剂在生物发酵过程中的应用提供参考和依据。
Defoamer is widely used in the fermentation industry for its convenient use,low cost and low energy consumption.Each defoamer has a certain defoaming effect,but it may also have a broad range of effects both on the culture environment and cells growth,which could in turn influence the target product yields.In order to achieve the optimal results,the defoamer type,function,concentration and its impact on the process of fermentation should be considered comprehensively.In this paper,the performance,defoaming mechanism,biological effects and screening methods of defoamers were reviewed,which provided reference and basis for the application of defoamers in biological fermentation.
