摘要
质控图是一种高效化的质量检测手段,其能在测定、记录、评估和监察目标对象过程质量的基础上,就目标的控制状态进行全面把控,从而为后期的控制管理提供依据。本文以蛋白质含量测定方法为例,在阐述质控图原理的基础上,就其在食品理化检验中应用的必要性进行分析,期望有利于提升质控图的应用水平,进而为食品安全提供有效保证。
Quality control chart is an efficient means of quality inspection, which can control the control state of the target entirely on the basis of measuring, recording, evaluating and monitoring the process quality of the target object, so as to provide a basis for the later control and management. Taking the method of protein content determination as an example, the necessity of its application in food physical and chemical inspection is analyzed on the basis of explaining the principle of quality control chart. It is hoped that the application level of quality control chart can be improved and the effective guarantee of food safety can be realized.
