摘要
以马铃薯、糙米、燕麦、荞麦为原料,研制一种营养丰富且口感细腻的马铃薯全谷物复合代餐粉.通过单因素试验和正交试验对马铃薯全谷物复合代餐粉配方进行优化设计,得到最佳配方为马铃薯粉42%、燕麦粉21%、糙米粉16%、荞麦粉5%、白糖16%.
With potato, brown rice, oats and buckwheat as raw materials, a kind of nutritious and delicate potato whole grain meal replacement powder was developed. The formula of potato whole grain composite meal substitute was optimized by single factor experiment and orthogonal experiment. The results showed that the best formula of potato and whole grain meal substitute powder was:potato powder 42%, oat powder 21%, brown rice powder 16%, buckwheat powder 5% and white sugar 16%.
