The more and more consumers were attracted by the plant protein beverages with its unique taste and rich nutritional value,which was one of the fastest growing sub-drinks in the beverage industry. In order to ensure the safety of health care plant protein beverages, HACCP system was applied in the plant protein beverage processing. By analyzing the hazards in the acceptance of production process, critical control points were defined, a reasonable limit was identified for each control point,monitoring procedures were developed, corrective actions to be taken were established,and the working model of HACCP system was accurately recorded to improve the safety and quality of the plant protein as well as provide reference for the production management of plant protein beverage enterprises.
