摘要 植物蛋白饮料以独特的口感和丰富的营养价值吸引着越来越多追求健康饮品的消费者,是饮料行业增速最快的品类之一。为保证植物蛋白饮料食用品质,探讨利用HACCP体系应用于其生产中。通过对植物蛋白饮料生产过程中危害点进行分析,确定关键控制点,制定合理的限值和纠偏措施,如实记录HACCP体系工作模式,以提高植物蛋白饮料产品的安全性,为植物蛋白饮料企业的生产管理提供参考。 The more and more consumers were attracted by the plant protein beverages with its unique taste and rich nutritional value,which was one of the fastest growing sub-drinks in the beverage industry. In order to ensure the safety of health care plant protein beverages, HACCP system was applied in the plant protein beverage processing. By analyzing the hazards in the acceptance of production process, critical control points were defined, a reasonable limit was identified for each control point,monitoring procedures were developed, corrective actions to be taken were established,and the working model of HACCP system was accurately recorded to improve the safety and quality of the plant protein as well as provide reference for the production management of plant protein beverage enterprises.
