摘要 本文使用磁场技术在酒柜储存空间内产生一定强度的磁场,利用磁场破坏新酿葡萄酒中的氢键以及弱化学键,降低分子间的界面张力,促进极性分子与水分子间的相互缔合作用,增强极性分子间的亲和力。同时磁场在葡萄酒陈酿过程中提供能量,加速醇、醛的氧化以及酯化化反应进程,同时加速低沸点物质的挥发,实现新酿葡萄酒的快速陈酿。 In this paper, the magnetic field technique is used to produce a certain intensity of magnetic field in the storage space of wine cabinet. The magnetic field is used to destroy the hydrogen bond and weak chemical bond in the newly brewed wine, to reduce the interfacial tension between molecules, to promote the association between polar molecules and water molecules, and to enhance the affinity between polar molecules. At the same time, the magnetic field provides energy in the process of wine aging, accelerates the oxidation and esterification of alcohol and aldehyde, and accelerates the volatilization of low boiling point substances to realize the rapid aging of newly brewed wine. wine.
