摘要 油炸面制品在我国有着悠久的制作历史,尤其在北方地区,油条、油饼、菜角等早餐主食更是深受广大百姓的喜爱。随着人们生活水平的提高和健康意识的增强,降低油炸制品的吸油率,以及保证油炸食品的安全品质对于生产油炸面制品的企业和个人来说至关重要。本文主要阐述了面制品在炸制过程中用油和产品本身的变化,让人们对油炸面制品及其用油有更深层次的认识,以便在生活中能更好地选择健康安全的油炸食品。
