摘要
超高浓度液糖化是淀粉制糖工业的发展方向。与现行普遍的28%~35%DS相比,42%以上的超高浓度液糖化可以简化玉米湿磨后的稀释工艺、果糖工业和发酵行业糖液浓缩工艺、减少葡萄糖母液量、减少固定投资,降低能耗,简化工序等。在超高浓度液化中通过调整淀粉酶L型和S型比例,使得42%的超高浓度糖化醪液黏度大幅降低50%,泵送醪液可行;调整糖化酶和普鲁兰酶比例,使得糖化DX值依然维持96%以上,糖化得率不因超高醪液浓度而降低,从而使得超高浓度液糖化具备了工业界盼望已久的可实际操作性。
Liquefaction and saccharification based on ultra-high concentration liquid is the development direction of sugar industry using starch. Comparing to the current 28%~35% of DS,using liquefaction and saccharification process with more than 42% ultra-high concentration liquid can simplify the dilution process after corn wet grinding and the concentration process of sugar solution in fructose industry and fermentation industry,reduce the usage of disused glucose solution,cut down the fixed investment,save energy consumption,etc. In this study,the viscosity of the 42% ultra-high concentration liquefied mash was significantly reduced by 50% using adjusting the usage ratio of L- and S-amylase,indicating the feasibility of pumping mash. By adjusting the the proportion of glucoamylase and promozyme,the DX value of saccharification remained above 96% and the yield of saccharification did not decrease for the concentration of high super mash. Therefore,the saccharification of ultra -high concentration liquid was now more practicable in industrial application.
