摘要 针对“食品质量管理与控制”课程传统教学重理论轻实践、教学模式简单、学生参与度低、考核方式单一、学习效果不理想等不足,从教学方法和考核方式等方面进行探讨,促进课堂教学与课外教学深度融合,推进课堂翻转,实现以学为中心的教学变革,提升教学质量。 For the course of Food Quality Management and Control,the traditional teaching methods exist some drawbacks such as emphasizing theory,neglecting practice,simple teaching mode,low student participation,single assessment mode and unsatisfactory learning effect. In this paper,the novel teaching methods and assessment methods were introduced,aiming to enhance the deep integration of classroom teaching and extracurricular teaching,promote classroom reversal,realize the teaching reform centered on learning,and improve the teaching quality.
